Chicken Stir Fry
Ingredients
- 1Tbs of extra virgin olive oil
- 1 cup of fresh vegetables (whatever vegetables you love)
- 100g of lean chicken breast
- ½ cup egg noodles
- Season with chilli, ginger, lemon grass and 2Tbs of low sodium soya sauce
Method
- Place olive oil in pan.
- Place all ingredients in the pan and heat until cooked through.
Summer Salmon and Vegitables
Ingredients
- 1 skinless salmon fillet
- 1 small zucchini chopped in semi circles
- ½ sweet potato chopped in semi circles
- 1 shallot thinly chopped
- 1 tomato diced
- 1 clove garlic
- 1Tbs of extra virgin olive oil
- Black peper
- 1Tbs fresh thyme chopped
- 1Tbs oregano
- 1Tbs fresh lemon juice
Method
- Pre-heat oven at 200°C.
- Mix zucchini, sweet potato, half shallot and garlic together seasoned with peper tp taste and spread on a large sheet of aluminium foil.
- Season the bottom of the salmon with peper and herbs and place it over the layer of veggies on the foil.
- Drizzle lemon juice over the salmon.
- Mix the tomatos, remaining shallots, thme and oregano toegther and spread over the top of the salmon.
- Wrap the saide sof the foil inwards the fold up the sides to seal. Place the fillet wrapped ion aluminium foil on a sheet of backing paper and bake until the salmon is cooked through. Approximately 25 -30 minutes but may vary depending on the size of the fillet.
